A few days ago on a lunch date with my two daughters, I was really hungry but I didn't feel like eating anything heavy as we were going to walk the entire afternoon. I needed something light but filling, food that would set me into great moods, give me energy and make me happy! So I came across this beautiful and healthy salad, it was divine- my heart was happy!  So I decided to make a salad similar to the one i had with a lemon/ blueberry vinaigrette.

So here we go...

Salad- A delicious blend of salad greens- spinach, kale, Avocado, Broccoli, Grapes, Roasted pear, Blueberries, sliced onion, sunflower seeds and Almonds. Layer all the ingredients on a bowl.

Lemon/ Blueberry Vinaigrette- 1/2 cup olive oil, 1/4 cup vinegar, 1/2 cup blueberries, juice from 1 lemon, 1 teaspoon sesame seeds and a pinch of salt and black pepper. Blend olive oil, vinegar, blueberries, and lemon juice together in a blender until smooth. Add sesame seeds, salt and vinegar, stir to combine.
